World’s First Michelin-Starred Taqueria Pop-Up At Tacombi – A Unique Experience

November 12-28, 2024, Chicago has the honor to experience Mexico City’s only Michelin-Starred taqueria pop in Chicago.

El Califa de León, founded in 1968, is well known in Mexico for its thinly sliced, but generously portioned beef taco and mouth watering, warm corn tortillas.

The pop-up is at Tacombi, a new authentic Mexican taqueria chain, located in Wicker Park (1442 N Milwaukee Ave) and Fulton Market (126 N Peoria St). The pop-up is also at New York City’s Tacombi location.

Behind the scenes in the kitchen

The pop-up includes El Califa de León’s four award-winning, famous tacos such as the Bistec (beef steak), Costilla (pork ribs), Gaonera (beef fillet), and Chuleta (pork), as well as two mouthwatering, homemade salsas (roja and salsa verde), created and served by Founder Mario Hernandez Alsonso. For avid carnivores who appreciate authentic Mexican cuisine, this pop-up will surely not disappoint!

Everyone is raving about the juicy, well cooked and perfectly proportioned tacos, which fill up the tortillas very nicely.

Favorites of my friends have included the Chuleta and Ganonera, referring especially to how tender the meat is, only seasoned with salt and lime, as well as the generous portions of the slices.

Gaonera and Costilla Tacos

I personally recommend the fabulous salsas! The roja is wonderfully smoky, hearty, and with robust flavors, while the salsa verde is lighter, but with just as much lively flavor.

My friends report that the salsa verde goes very nicely with the Chuleta taco, while the roja works best with the beef tacos.

The pop-up also offers sinfully delicious elote, refreshing agua frescas (like fruity hibiscus), and creamy, light horchata with almond milk.
